			<content:encoded><![CDATA[<p>The children and staff at UT&#8217;s Early Learning Center have begun growing a lot of their own food in an effort to eat healthier.</p>
<p>They want the school&#8217;s new kitchen garden to be a model for the community and a training ground for early childhood educators on gardening with young children and families.</p>
<p>The school is inviting the community to a garden party from 5:30 to 6:30 p.m. on Thursday, May 16, at 1206 White Avenue.</p>
<p>The Early Learning Center provides full-day early education programs for families of infants, toddlers, preschoolers, and kindergarteners. It also is a research and practice laboratory for UT students and faculty.</p>
<p>&#8220;We have been working with our own menu for the last couple of years trying to move back to more whole foods and off processed foods as much as possible,&#8221; said Kathy Kidd, a program director at the learning center and a lecturer in the UT Department of Child and Family Studies. &#8220;Our chef, George Lovell, is working to continually improve the quality of our offerings for the children.&#8221;</p>
<p>The students are gaining gardening experience as they tend to veggies and herbs in their pizza garden, which includes tomatoes, basil, onions, green peppers, oregano, and mushrooms.</p>
<p>They&#8217;re also growing beans, artichokes, eggplants, and a variety of tomatoes, herbs, and lettuces.</p>
<p>&#8220;The children can cut the herbs and experience that smell,&#8221; Kidd said. &#8220;What they grow will be incorporated into their menu.&#8221;</p>
<p>The kitchen garden was funded through a $15,000 grant from the UT Alliance of Women Philanthropists. The money is being used for extensive landscaping and repurposing a previously underused area of the center&#8217;s grounds for the garden, Kidd said.</p>

Sean Durham, director of the center, decided to give the playground a new look to help children connect with the environment. Dawn Coe, an assistant professor in the Department of Kinesiology, says the natural setting not only seems to help kids become more interested in nature, it may make them more active. She&#8217;s conducting a study on the playground to find out. The redesigned playground includes climbing tires, fallen trees, stumps, a nature trail, waterfall and tree house.</p>

<p>The University of Tennessee, Knoxville, has many educational, active and interesting camps to offer. All camps are on the UT campus unless otherwise noted. Some entries provided specific building information:</p>
<h4>4-H Camps</h4>

<p><strong>Electric Camp</strong><br />
Date: June 26–29<br />
Ages: Grades 6–7<br />
Cost: $200<br />
Fee includes the cost of meals, lodging, field trips, insurance, program, etc. Transportation fees are covered by members of the Tennessee Electric Cooperative Association.</p>
<p><strong>Smart Camp</strong><br />
Date: July 3–6<br />
Ages: Grades 5–12<br />
Location: W.P. Ridley 4-H Center in Columbia, Tennessee<br />
Cost: $215</p>
<p><strong>Other camps</strong><br />
4-H also offers Junior 4-H Camps for grades 4–6. The five-day residential camps, which are held at various sites around the state, include swimming, golfing, music, group sports, and hiking.</p>
<p>4-H Adventure Camps, for grades 6–8, are for held at various sites around the state, and offer activities like mock archaeological digs, fishing, tubing, nature hikes, canoeing, swimming, and survivor challenges.</p>
<h4>Architecture and Design</h4>
<p><strong>Design Matters Camp</strong><br />

Ages: High school students<br />
Location: Art and Architecture Building, 1715 Volunteer Boulevard<br />
Offers high school students an introduction to the design of the built environment and the considerations that shape it. The setting, curriculum, and instruction also provide the opportunity to experience life as a design student on a university campus for one week. Curiosity is the sole prerequisite; previous architecture or design experience is not necessary.<br />

<h4>McClung Museum camps</h4>
<p><strong>Dig It! Fun with Fossils</strong><br />
Date: June 18–22<br />

Location: UT&#8217;s Frank H. McClung Museum, 1327 Circle Park Drive<br />
Cost: $110 per child; $99 per child for museum members<br />
Campers will explore dinosaurs, mosasaurs, mastodons and other extinct animals by examining real fossils and participating in a variety of activities such as excavation, recording, making molds and casts, studying &#8220;rock&#8221; layers, following tracks and other fun activities. Grades: 5-12<br />
Campers will learn proper arm swing, hand contact, and footwork. Outside, middle, and right side hitting will all be covered. Back row attacks and blocking also will be reviewed in this camp.</p>
<p>The combination price for attending both Setter and Hitter Camps is $100.</p>
<p><strong>Team Camp</strong><br />

Team Camp is an intense, structured program that will focus on team development and performance through training with high school teammates and competition against participating camp teams. 			<content:encoded><![CDATA[<p>KNOXVILLE—The University of Tennessee Early Learning Center will host several open houses this fall for families of infants, toddlers, preschoolers, and kindergarteners.</p>
<p>Families can meet program directors and teachers, tour classrooms, and learn about the center&#8217;s curriculum and philosophy.</p>
<p>The first open house, for infant, toddler, and preschool classrooms, will be from 5:00 to 6:30 p.m. on Wednesday, November 9, at 2010 Lake Avenue and 2016 Lake Avenue. The 2016 Lake Avenue location is new. Children moved into the building in August.</p>
<p>The second open house, for kindergarten and first grade, will be from 3:30 to 6:30 p.m. on Thursday, November 17, at 1206 White Avenue.</p>
<p>The third open house, for infant, toddler, and preschool classrooms, will be from 5:00 to 6:30 p.m. on Monday, December 5, at 2010 Lake Avenue and 2016 Lake Avenue.</p>
